Pumpkin Spice Cookies

Because I love you all . . .

1 box spice cake mix
2 eggs
1/3 C. canned pumpkin

Preheat oven to 350*. Mix those three ingredients (and only those three ingredients) to form dough. Drop by heaping tablespoons onto cookie sheet and bake about 13 minutes. (I like to use a small ice cream scoop so they all come out exactly the same size, but I'm OCD like that. Do what you want.) They come out really poofy -- more cake than cookie, really. Allow to cool 5 minutes on pan then cool completely on rack. Frost with cream cheese frosting. From a can. You could make your own from scratch, but then you'd just be showing off. These are low-fat (if you ignore the frosting) since they are made with pumpkin instead of oil. Yummy. So perfect for November.

  1. You have the greatest "quick & easy" recipes up your sleeve! Where were these when we were in college and never had "ingredients" on hand?? :) BTW, I gave some of your cakey snickerdoodles to a friend who said they were the best snickerdoodles she had ever tasted. So, kudos to you!

    Hey, have you ever thought about adding a "recipes" section to your blog, so I (and others) can easily find them? Speaking as a non-blogger (so ashamed) I have no idea how much effort this would entail... just a thought. :)
