Chocolate sandwich Cookies!! They only take a few simple ingredients and boy, are they a crowd-pleaser. I just whipped up a batch of chocolate cake-mix cookies and used vanilla frosting for the filling. I set out to create something like a homemade Oreo, but these are nothing like Oreos. They are soft and chewy and sooo much more delicious.
Here's the recipe:
Chocolate Sandwich Cookies
1 box chocolate cake mix
1/2 C. oil
2 lg. eggs
1 can vanilla frosting
Preheat oven to 350 degrees. In a mixing bowl combine the chocolate cake mix powder {just the powder -- don't add the ingredients the cake calls for}, oil and eggs until blended. This will form a thick cookie dough rather than a thinner cake batter. Form into 1-1/4 inch balls and place 2-3 inches apart on a baking sheet. Bake for 10 minutes. Remove from oven and let them sit on the hot pan for another 5 minutes before moving them to a cooling rack. {This is what helps them to have that soft, chewy texture. If you like a crunchier cookie just bake them longer.}
Once the cookies are cool, place a dollop of frosting between two cookies, sandwich them together, and enjoy! This recipe makes about 15 sandwich cookies.
I like them better on the second day {if they last that long} after they've had a chance to set up a little. I'm not sure why it makes such a difference, but it does! Surprise your family with a batch of these you just might win the Mother-of-the-Year award.
