Zucchini Bread and Gratitude

Friday morning I went to visit some friends from church.  I wanted to take a yummy treat for them to say thanks for being great friends, but I didn't have a ton of time.  I immediately thought of Zucchini Bread.  This recipe is a huge favorite in our home.  Even my youngest, who has decided not to eat anything green, loves it!  If that's not high praise, I don't know what is. Plus, it's a simple recipe that you can whip up in just a few minutes and throw in the oven while you do your morning chores and get ready for the day.  Your friends and family will think you worked so hard.  That's my favorite kind of recipe.

Zucchini Bread

3 eggs
1 C. oil
2 C. sugar
2 C. grated zucchini
2 tsp. vanilla
3 C. flour
1 tsp. baking soda
1/4 tsp. nutmeg
1/4 tsp. baking powder
1/4 tsp. ground cloves
1 Tbsp. cinnamon
1 tsp. salt
1 C. nuts {optional}

Beat eggs until light and fluffy.  Add oil, sugar, zucchini, and vanilla..  Mix lightly.  Add the rest of the ingredients.  Mix until well blended.  Stir in nuts, if you are using them.  Pour into greased loaf pans and bake at 350 degrees for 1 hour.  Makes 2 large loaf pans or 4 mini loaf pans.  {Bake 35 minutes for mini-loaf pans.}

I really want to make an effort to express gratitude this month to all the people who have done so much for me and my family.  A little loaf of bread seems like such a small gesture in exchange for the love and support I have received from these awesome women, but we do what we can, right?  Keep checking in this month to see what else I am doing to thank the wonderful people in my life.  I even have a really cool giveaway coming up this month to thank YOU ALL for supporting me through this little blog of mine.   Have a great day, friends!
