Zucchini Bread
3 eggs
1 C. oil
2 C. sugar
2 C. grated zucchini
2 tsp. vanilla
3 C. flour
1 tsp. baking soda
1/4 tsp. nutmeg
1/4 tsp. baking powder
1/4 tsp. ground cloves
1 Tbsp. cinnamon
1 tsp. salt
1 C. nuts {optional}
Beat eggs until light and fluffy. Add oil, sugar, zucchini, and vanilla.. Mix lightly. Add the rest of the ingredients. Mix until well blended. Stir in nuts, if you are using them. Pour into greased loaf pans and bake at 350 degrees for 1 hour. Makes 2 large loaf pans or 4 mini loaf pans. {Bake 35 minutes for mini-loaf pans.}
I really want to make an effort to express gratitude this month to all the people who have done so much for me and my family. A little loaf of bread seems like such a small gesture in exchange for the love and support I have received from these awesome women, but we do what we can, right?
