Hi y'all!  Today I'm sharing a delicious recipe with you that looks like a party in the bowl and tastes like a party in your mouth!  For years we made white chocolate popcorn for all our friends at Christmas time.  Everyone loves it and it's so easy you can make 20 batches of it in one afternoon if you need to.  It wasn't until recently that I started to wonder what it would be like if you mixed other yummy stuff in with the popcorn.  {I mean, duh!  Sometimes I am really slow.}  This year for Christmas I added chewy cinnamon candies for a spicy kick and it was to-die-for delicious. Now that it's spring, I wanted to try something fruity and colorful, so I stopped at Walgreens while I was out running errands and bought a box of Fruity Pebbles!

You will NOT believe how simple and yummy this treat is to whip up for your family and friends.  

Fruity Pebbles Popcorn

3 bags of butter flavored microwave popcorn
2 bags of white chocolate chips
4 C. Fruity Pebbles cereal

Pop the microwave popcorn and put it in a large bowl.  Pick out as many of the unpopped kernels as you can.  Place white chocolate chips in a microwave-safe bowl.  Microwave on HIGH 45 seconds at a time, stirring in between, until the chips are completely melted.  Drizzle the white chocolate over the popcorn and gently stir to coat.  Add Fruity Pebbles one cup at a time and gently stir to mix them in.  Once all ingredients are mixed in and well-coated in white chocolate, spread out on wax paper to cool.  When the white chocolate has solidified again, break the popcorn into bite sized chunks and serve.

I told you it was easy!  The sweet, fruity cereal mixed with the salty popcorn is unbelievably tasty and I love the extra crunch the cereal adds.  I had planned to package some of this up in individual bags to take to a few of our friends from church, but after my husband and I picked at it all day {"Maybe just one more piece . . ."}, it didn't take long for my kids to gobble up the rest of batch after school.  Oh well.  I guess we'll just have to make some more!  The sacrifices we make for our friends . . .

  1. Yumm!! The first thing I thought when I saw this was that holy cow, a new gluten free snack! (I just started a gluten-free diet and so I'm seeing everything through GF glasses-lol)
