Hi everyone!  One thing I'm learning about having teenage boys in the house is that they are like human vacuums.  No, they don't pick up after themselves and leave every room cleaner for having been there.  I wish!  They inhale every ounce of food I bring up in this place.  They are almost ALWAYS hungry.  People warned me about this, and still I'm shocked.  They invariably come home from school famished and ransack the kitchen looking for something good to eat.  After my shopping trip to Safeway this week, they were excited to find Carnation Breakfast Essentials packs in the pantry so they could make their favorite smoothies.

It's a win-win.  The kids are thrilled with what is essentially a healthy milk shake, and I love that they're getting tons of vitamins and minerals, protein, calcium, and a serving of fruit.  They can make these smoothies themselves with minimal mess, too.  Holla!

I started training them young.  We've been making smoothies using Carnation Breakfast Essentials drink powder {or Carnation Instant Breakfast, back in the day} for years.  One of my older son's favorite parts of diabetes camp every summer was when he would get a "CIB" if his blood sugar was low at bedtime.  At first he said he was worried that a "CIB" was a shot or something, so he was thrilled when the doctor handed him a delicious shake to drink instead of pulling out a needle.

My kids will just mix it with milk and drink it plain sometimes, but our favorite thing to do is "invent" smoothies.  We never really invented anything -- there are yummy smoothe recipes right on the packages and on the Carnation Breakfast Essentials website -- but we like to think that we did.  My boys' favorite is the Chunky Monkey, a yummy blend of chocolate, peanut butter, and banana.  I prefer a more tropical Piña Colada, but I haven't met one yet that I wouldn't drink!

Here's how you make a couple of our faves:

Chunky Monkey Snack Smoothie


1 packet Milk Chocolate flavored Carnation Breakfast Essentials drink mix
1 C. milk
1 frozen banana
1 Tbsp. peanut butter

Put all ingredients into a blender and mix until smooth.

Piña Colada Snack Smoothie


1 packet French Vanilla flavored Carnation Breakfast Essentials drink mix
1 C. milk
1/2 C. frozen pineapple chunks
1/2 banana {frozen or regular}
2 Tbsp. Torani Sugar Free Coconut flavored syrup

Put all ingredients into a blender and mix until smooth.


Note:  If the smoothies are too thick, add a little more milk and blend again.  If you don't have frozen bananas or pineapple, you can put in regular fruit with about 1/2 C. of ice.  I like to cut bananas into thirds and keep them in a bag in the freezer for making smoothies.  We also keep a bag of frozen pineapple chunks.  I like to use as little ice as possible to avoid watering the smoothies down, but that's just a personal preference.
