Hello, friends. I know I'm beating a dead horse by bringing up my job again, but, you guys! This working full time is kicking my butt. I used to have hours upon hours of "free time" to blog and craft and bake before my family came home at night and I had to start in on my "job" of mothering and wife-ing. Now I spend hours upon hours taking care of other people's children before coming home and throwing something together to eat, starting a load of laundry, and falling straight into bed. I am loving my job, but I am finding that I really need to streamline my chores here at home. A great way to do that is by using Reynolds Oven Bags when I cook dinner.
Reynolds Oven Bags are not just for roasting turkey. I made these delicious chicken fajitas for dinner in minutes the other night and they got rave reviews from every member of the family. Oven Chicken Fajitas
2-3 chicken breasts, cut into strips1 red pepper, sliced
1 green pepper, sliced
1 large onion, cut in half and sliced
1 packet fajita seasoning mix
1 can diced tomatoes with green chiles
1 Reynolds Oven Bag
flour tortillas, shredded cheddar cheese, sour cream, and guacamole for serving.
Preheat oven to 400ยบ. Place oven bag inside a 9x13 pan. Put cut chicken breasts into bag along with fajita seasoning. Gently knead the bag to make sure all the chicken gets covered in seasoning. Add diced tomatoes with green chiles, peppers and onion to the bag. Close the top of the bag loosely with enclosed plastic tie. Bake 30 minutes or until chicken is cooked through and vegetables are tender.
Serve on flour tortillas with shredded cheese, sour cream and guacamole. We like to have a side of Mexican rice to round out the meal. Super-duper yummy!
