I whipped these up for lunch last week while my parents were here for a visit and they were a hit! My kids gobbled them right up and they were SO easy to make. I love a win-win.
Baked Nachos
2 lbs. ground beef
taco seasoning
2 cans cream of mushroom soup
1 can RoTel tomatoes
1 bag tortilla chips
shredded cheese
1. Brown ground beef. Drain any excess fat. Add taco seasoning, cream of mushroom soup and rotel. {Phew! The hard part is done!}
2. In a 9x13 pan layer ingredients: 1/2 of your tortilla chips {broken up slightly}, 1/2 of meat mixture, shredded cheese {as much as you like}, last 1/2 of your tortilla chips {again, broken up}, 1/2 of meat mixture, more shredded cheese.
3. Bake at 350* for about 20 minutes or until heated through and cheese is bubbly. Serve with sour cream, guacamole and/or whatever other toppings you like. I think sliced olives and shredded lettuce would have been delicious, too.
See?! Easy cheesy. It's a perfect week night meal for those busy days when you don't really feel like cooking and it feeds a crowd. I'd love to hear what your favorite easy meals are. Leave a comment!
