
Hello, friends! One of the things I remember fondly about growing up in my family is the food we used to eat. Is that strange? One bite of my mom's sage stuffing and I'm instantly twelve years old again. Another of my favorites were the cheese muffins that my brother, Casey, used to make. It's an odd memory to me -- Casey baking muffins -- because it was so out of character for him, but, oh, those muffins. So yummy. I have tried to track down the recipe, but no one really remembers where it came from. I've pinned several recipes on Pinterest, determined to find the right one. This recipe is a little eggier than the ones I remember, but they were super delicious and satisfied my cheese muffin cravings.

Cheese Muffins
{recipe adapted from Kayotic Kitchen}
1½ tsp. baking powder
1½ C. sour cream
1 package KRAFT Finely Shredded Sharp Cheddar Cheese
½ tsp. salt
4 eggs
butter {for greasing pans
Preheat oven to 350º.
Mix flour and baking powder in a mixing bowl. Add sour cream, eggs, and salt. {You could also add some fresh herbs at this point if you feel like gettin' fancy with it. I like them plain.} Mix all ingredients lightly. Add the cheese and keep mixing until all the flour is mixed in.
Grease your muffin tin and divide the batter between the 12 cups. Bake at 350º for 25 minutes or until golden. Let them cool in the pan for 10 minutes before removing.

Look at all the cheesy goodness! I like to eat them warm with a smear of butter. Because they're a little eggy, they reminded my kids of German Pancakes so D ate his with syrup, which was also delicious. I know it sounds weird, but it really was good. These are good as a stand-alone breakfast dish or as a side dish on the dinner table. My husband would love them with pot roast so he could dip them in gravy, almost like a Yorkshire Pudding.
