Hi, y'all!  I mentioned before that my parents were in town last weekend.  We had such a good time visiting with them and playing card games non-stop.  My kids were in their "happy place" for sure!  They were here for Sydney's birthday so my mom made the most delicious pie as a treat.  I had never had buttermilk pie before so I wasn't really sure what to expect, but I'm generally game for anything creamy and covered in berries, so I had high hopes.  This pie did not disappoint!  

The filling itself is similar to a custard pie, but it has a subtle lemon flavor that makes it unbelievably yummy.  That slightly tart, creamy lemon mixed with fresh berries is to-die-for.  Last weekend we topped it with sugared raspberries.  This time I thought it would be fun to do a red, white, and blue combo of strawberries, blackberries, and whipped cream -- how cool would it be to cap off your 4th of July barbeque with this delicious patriotic dessert?

Buttermilk Pie


1½ C. sugar
3 Tbsp. flour
3 eggs, whisked
1 C. buttermilk
2 tsp. vanilla
1 stick butter, melted and cooled
2 tsp. fresh lemon zest
2 tsp. fresh lemon juice
1 9" unbaked pie shell
berries for topping, if desired

Preheat oven to 350º.  

Whisk sugar and flour together in a large mixing bowl.  Whisk in the eggs and buttermilk.  Add butter, vanilla, lemon zest, and lemon juice and mix well by hand. 

Pour filling into pie shell and bake until filling is set and top is lightly golden brown -- about 45-50 minutes.  Cool to room temperature before serving.  Store up to 3 days covered and chilled.

There you have it -- a perfectly easy and delicious summer treat.  I'll be making this recipe again for the 4th.  It's acceptable to eat buttermilk pie every weekend, right?
