Amish Baked Oatmeal
3 C. quick oats
1 C. sugar {brown sugar also works and is delicious.}
1 C. milk
½ C. butter, melted
2 eggs
2 tsp. baking powder
½ Tbsp. salt
2 tsp. vanilla
Serve with: warm milk and fresh fruit or brown sugar
Combine the first 8 ingredients and mix well. Spread evenly in a 9x13 pan. Bake at 350ยบ for 30 minutes or until golden brown and slightly crispy around the edges:
Immediately spoon into bowls and add warm milk. Top with fresh fruit and/or brown sugar if desired. {Oh, you will desire!}
While the oatmeal is baking, I like to slice my fruit and put it in a bowl with a little bit of sugar to macerate. By the time the oatmeal is done you'll have berries in a sweet syrup to drizzle over your oatmeal. We used strawberries here, but any kind of berries will work. We also like peaches and nectarines when they are in season.
You may think you don't like oatmeal, but this is nothing like the gummy slop that a lot of people think of as oatmeal. Don't get me wrong, I'm an oatmeal fan to begin with, but this stuff is like oatmeal and then some. Try it and let me know what you think!

Thanks Melissa! The leftovers do save and reheat really well in the microwave, but you could easily cut the recipe in half and bake it in a smaller pan. Enjoy!
DeleteThank you so much for sharing this. I made it and it is the best oatmeal ever! I did add walnuts and raisins, cause that's how I like to eat my oatmeal. But I'm thinking chocolate chips next time I make it! This recipe is a keeper. Thanks again!
