Hello, friends!  My husband and I celebrated our 18th wedding anniversary about a week ago and it brought up all kinds of fun memories.  Oddly enough, one of the things I remember fondly about our wedding was the punch that was served at our reception.  We call it "Wedding Punch" because it was served at most, if not all, of my siblings' weddings, as well as at my parents' wedding back in the day.  Over the years, in our little family, we have served it at birthday parties, baby showers, pool parties, and even backyard barbeques, so I think a more fitting name for it would be "Celebration Punch".

It's a delicious blend of sherbet, ice cream and lemon-lime soda -- oh-so delicious.  We decided to whip up a batch last week in honor of our anniversary.  While I was at Safeway getting the necessary ingredients, I decided to see how it would taste if I bought 7Up TEN instead of the regular, full-sugar, full calorie soda to try and cut a few calories.  Only 10 calories per serving instead of 140?  Yes, please -- as long as it tastes good, that is.  It was totally delicious!  You couldn't even taste a difference at all.  I mean, this punch is still not what you'd call a health food, but it's good to know that we can have a treat sometimes without completely blowing our daily calorie count.

That's all you need!  1/2 a container of vanilla ice cream, 1/2 a container of sherbet {any flavor!}, and 1 liter of 7Up TEN soda.  Blend them all together by any means possible.  

I have pictures from my wedding of my Grandpa Healey wearing an apron, mixing up huge batches of wedding punch with a potato masher to help my mom out.  That method works great.  For normal-sized batches, like the one I made here, I just use my blender to mix it all up.  One recipe was plenty to serve our family of five and then some if you're having it for dessert.  As a punch at an event it would have served double that at least.

Here's my helpful tip: If you are only using half of your ice cream and sherbet, use a serrated knife to cut the carton in half.  Use the top portion for your punch and put the lid back on the bottom half to save for later.

My sweet kids get so excited when we talk about old times and look at pictures from our wedding.  Whenever we make this punch, it automatically makes the occasion more special in their minds, which is fun for me!  A simple swim party with friends suddenly becomes THE EVENT of the summer if we serve this punch.
