My Kids Ate Their Veggies {and Yours Will, Too!}

My kids are pretty good eaters, I'm not gonna' lie, but sometimes they don't love to eat vegetables.  Pretty shocking, right?  Kids not loving veggies?!  I was excited to look through the Clare Crespo Cookbook which is full of fun, simple recipes that make eating vegetables fun.  My kids may be 10,11, and 13, but that doesn't mean they don't appreciate a whimsical meal once in a while.  In the cookbook you'll find things like mashed sweet potato volcanoes and zucchini boats.  All of the recipes are made with Country Crock because it makes veggies taste so good that you won't have to try and hide them. I grew up on Country Crock and have used it for years in my own home so I knew the recipes were going to be good.

I wanted to make a fun brunch for my family today so I tried my hand at Hash Brains and they were a HUGE hit -- even with the nearly 40 year old "kid" I married.
See, they gobbled those brains right up!  Now, I know what you're thinking.  Potatoes aren't hard to get kids to eat.  What about broccoli?  Or squash?  Country Crock and Clare Crespo have got your back.  I don't think you could really go wrong with any of the great recipes.
