Happy Canada Day!! {Jello Poke Cake Recipe}


Happy Sunday morning y'all!!  Today is Canada Day, which is meaningful to our family since my awesome husband grew up in Cardston, Alberta.  He's lived down here in the states mostly since coming down for college, but we like to celebrate his heritage.  Since it's so foreign to us. . . I guess.  Or something. 

Actually, we'll take advantage of any opportunity to make a cool, delicious dessert in the long, hot summertime.  We're having dinner with some friends tonight so Brent whipped up a couple Jello Poke Cakes for the occasion.  Yep, Brent.  All by himself.  Jello Poke Cake is a long-time family favorite.



Ri has had it for his birthday cake several times throughout the years.  I was shocked when I realized I had never shared this recipe on my blog.  Now, I know this recipe isn't really original, but it's delicious so I thought I'd share.  It's red and white and perfect for Canada Day!!  {Or the 4th -- whichever you celebrate.}

Jello Poke Cake

1 box yellow cake mix {and ingredients to prepare}
1 large box of jello {we like strawberry}
1-1/4 C. boiling water
1 large box of instant vanilla pudding
2-1/2 C. milk
1 container Cool Whip

Bake cake mix in a 9x13 pan according to package directions.  While cake is still warm, poke holes in the top of the cake using the handle of a wooden spoon.  You could use a fork, but I like nice, big holes for the pudding to fill up.  Mix Jello with boiling water until completely dissolved and pour over cake.  Allow cake to cool completely.  Mix pudding and milk and pour over the top of cooled cake.  Chill for several hours -- overnight is best.  Before serving, frost with Cool Whip.

This is the easiest, lightest, most delicious summer cake.  I promise, your family will love it!!  You could jazz it up for the 4th by topping the Cool Whip with sliced strawberries and fresh blueberries in a flag pattern or just by adding some blue star sprinkles.

I think the kids and I have decided to start our little Colorado vacation a few days early by heading to Vegas to visit my sister and her family, so I probably won't get my bathroom post written for a couple of weeks.  I have a few other fun things I'll be sharing in the meantime, so keep checking in.  Enjoy your Canada Day!
